Blue Crab Nachos

Oh MY Yummy~ness

Go now to the store and purchase ingredients for this great recipe…you will be so glad you did! I got this recipe from my wonderful friend Jeannie. Every Christmas at her annual Christmas party we chow down on a big batch of these little nacho nuggets! Me, I don't need a party for these nachos...Gary and I eat them as a meal. She usually doubles and even triples the recipe~I'm telling ya~muy delicioso :)





Blue Crab Nachos

2 packages Hollandaise sauce (made as directed on the package – with milk, not water)
1 pound lump crab meat
4 tablespoons cilantro, chopped
4 tablespoons green onion, chopped
4 pieces bacon, cooked & chopped
4 teaspoons pickled jalapenos, chopped
1 package shredded cheddar
1 package shredded Monterrey Jack
Tostitos Scoops

Prepare Hollandaise sauce according to package directions; reserve. Preheat broiler. Mix crab meat, cilantro, onion, bacon, cheese, and jalapenos in a bowl. Add hollandaise sauce.

Spoon generously into Tostitos Scoops and place under broiler until bubbly.


***The mixture is BETTER when made one day ahead and refrigerated (tightly covered). Do not fill Scoops until right before broiling – they will become soggy.

Still Celebrating my B-day


I am so stinkin' excited about our trip to the river! ~YeeHaw~ I can't wait to kick back and relax. I am a newbie...I have never floated...hey...I can hear you laughing. I am even more excited to hang out with one of my high school friends. Life gets so busy, and we talk on the phone, but there is nothing like hanging out with no kiddos...no rules! Her husband and Gary get along great...so it will be an awesome time. AND we are hopefully gonna hook up with another couple once we get there! Good times, good friends!!

I know that the water level is low, and I hope that works in my favor. I don't want to get pulled under the into fast rapids..heehee! Anyway, I am taking a disposable camera so I don't mess up my new one. {k,m,kmjhmgdhygfj} Those letters right there...that was Layla. She LOVES the computer and wanted to type some words. Her blogging debut! So there... After our 'float' we are going to listen to some good 'ole Texas country music!

new camera randomness


I am LOVING the new camera.


We are having tons of fun with it. My favorite thing to photograph so far is Harley. She is a great model. She listens to me. The kids...not so much and Callaway...bless his puppy dog heart...he isn't hearing well these days. Not because he is stubborn, just old :(

Not so yummy cookies

Layla is the best helper ever! She loves to help with chores around the house. Every chance she gets she is helping. She helps with laundry, dusting, and asked me to buy her a mop! I hope this continues :)
We baked a not so good cookie recipe the other day. She told her daddy that the cookies weren't very good, but she ate 3 anyway! HA!!



She LOVES to sit up on the counter!

Conversation with Layla

Gary got home from his 4 day trip to Boston, and we jumped in the car to grab a bite to eat. Layla was so excited about eating at a restaurant...she loves to eat out! We LOVE Posada's. It is our favorite! We were all buckled in and Dad asked Layla what she learned at church this morning. Her response..."I learned how to not obey your parents." Really?! I think she got her words a little confused! Our church is GREAT!

Usually her conversations make sense. I just love this age, because she is trying to use larger words. It always amazes me ~ the little sponges kids are!
