pork taquitos

I made taquitos baked not fried for our SuperBowl celebration on Sunday.

One of my bloggy BFF's Laura @ Cowboy Boots and Baby Booties always keeps me in her cooking loop.  We share recipes like crazy, back and forth!

I love the recipe part of blogging.  The reason??
Usually people have made the recipes and so they are tired and true!

Laura introduced me to the website Our Best Bites. If you click on the OBB link I used you can see their version of these goodies.  I pretty much used their recipe, but I did change a few things.

I didn't have fresh cilantro, but the Litehouse seems good enough.  I also didn't have lime juice, only lemon.  I didn't have green salsa, so I used Clint's red salsa.  And I didn't have pepper jack cheese, so I used mild cheddar.  Oh, and BIG change...I used shredded pork...not chicken.

I was craving pulled pork sliders so I made a pork butt in the slow cooker and diced up cooked pork instead of chicken.  It turned out to be an amazing choice!

{this picture is a refridgerated shot of the mix}

The filling...pork and all the added ingredients = WONDERFUL and so flavorful!
{if you want my slow cooker pork recipe...let me know...I'll send email it to you}

These little boogers were super hard to roll though.  Rolling corn tortillas is torture.  I did all the things they say do when rolling them, but nothing worked...see the cracks in the lower tort?  Sheesh!  I said a few choice words.  Silly I know, but I am so OCD when it comes to cooking. I want my recipes to turn out perfect and great.  Anyway, even though there were a few cracks they turned out good.

Not the prettiest taquitos, but muy deliciouso!!

Did I mention they aren't fried?  They were sprayed with cooking spray and topped with salt prior to baking.  AND crispy....you wouldn't believe they are not fried.

We dipped them in lite sour cream mixed with Tapatio...a hot sauce similar to Tabasco.
Look for it at your grocery store...it has the best hot and spicy flavor and not near as vinigary [if that is a word] as Tabasco.

And one last thing...click over to see the recipe and bookmark Our Best Bites. I added it to my blog roll.  I can't wait to follow the site and try more of their creations.

Understanding 100

Happy Monday y'all!  I am thrilled both children are at school today after almost a week off!
Mommy time...whoo hoo!!!

Layla worked very hard on her 100th day of school project.
I think it turned so cute, so I decided to share it with y'all.
And...this IS our family scrapbook...so I like to put a little bit of everything here on this blog!

The goal of the project was to gain an understanding of the number 100.
We were supposed to take 10 groups of 10 things to equal 100 things.

We decided to do a pizza theme.  I stopped at the local pizza place and they donated a box...how nice was that?  And as you can see we raided the craft closet.  It was so fun to watch Layla glue, cut and create.  She did need our help though.

Some of the pieces wouldn't stick with regular glue, so we had to bust out the hot glue gun.  Everything is on there tight now.  Sadly due to the snow they weren't actually in school on the 100th day.  I'm sure they will have fun celebrating this week.  Layla looked so cute leaving this morning carrying her pizza!

Next project for school...a Valentine's day box!  Fun, fun...kindergarten is so fun!

Have a great day :)

I got my learn on

Nine things I have learned from being snowed in:

1. Sports bras are not flattering. I have been alternating the four sports bras I own the last few days.  Gary took a picture of me playing checkers with Layla. It was quickly deleted. Yuck. I had a uni-boob.  Lucky for you guys you can't see the uni-boob in the picture below....just the deep look of concentration on my face.

2. It is so hard to potty train a puppy when it is 8 degrees outside. Before the cold snap we had him trained to go to the door and wait for us to let him out.  Who wants to be let outside in the coldest weather ever? Not him. Let's just say my new steam cleaner got lots of use. Stinkin' puppy will go on the edge of a pee pad. Why can't you aim your rear end at the middle of the thing dude?

3. When I am bored I like to cook and eat. I look for reasons to eat, I feel I need to try a new recipe, or sample/taste this or that.   I would cook dinner early to snack on it, and then eat again at dinner time. Every day while snowed in this business went on. Hello extra pounds.  We all ate with reckless abandon the entire time we were snowed in as if it would keep us warmer.

4. The first trip to the grocery store after a storm is chaos. The grocery store was packed. The checkout lines were 5 shopping carts deep.  There were no eggs in sight, and good luck getting a loaf of bread. It was bad. Not to mention I was shopping with my stomach and eyes. I bought things we don't normally keep in this house. Processed junk....Little Debbie snacks, Doritos, peanut M&M's.  I let this foolishness happen.  Now I am going to have to find some self control.

5.  I learned that I let my kids win sometimes.  While playing games I would let Layla win.  I hate to get beat, especially by a 5 year old.  She talks trash, but if she loses she will want to play again and again and again.  There are only so many games of checkers you can stand to play in one day.

6. Hayden's feet never get cold.  I would insist he keep socks or slippers on when is was below freezing outside.  He is so wild and crazy the socks/slippers fall off.  I spent half my time putting them right back on.  Each time I would re apply is socks his feet were hot.  So,I just gave up.  Little Mr. Hot Feet. I wish that were the case for me. My feet are always ICE cold.

7.  I learned that I love my family.  We always have so much fun together.  I love the option of getting out of the house though.  Knowing we were stuck and couldn't leave was hard.  Gary works from home and I stay home with the kids.  Any chance we get, we go out as a family.  Whether it be to grocery shop, go to the park, or out to eat at a restaurant.  We like getting out as a family.  We realized that we really like each other, but we like each other more when we can get a good mix of at home time, and out and about time. Make sense?

8.  My husband is a big kid.  He had just as much fun, if not more than the kids...playing in the snow.  See him sliding in the snow as if he were sliding into home base.  He taught the kids how to make perfect snow balls.

9.  I don't want to wish away or speed up any season of my life, but I AM READY FOR SPRING.  That is the most important thing I learned.

Happy Super Bowl Sunday :)

wrong predictions

Monday night after gymnastics we sat down like we do every night and had dinner as a family.  After we were done eating we started talking about the snow heading our way.  Everyone at the table gave their predictions of how much snow would be falling.
And this is how much snow they thought we'd get.

We were all kinds of wrong.  We had now idea we'd be snowed in for 4 + days.  I know you, my blog readers are getting just as tired of me posting snow pics as I am of taking them.  I am tired of posting about the snow, but we are consumed with it.  We have nothing else going on right now.

Oh how I wish we did though :)

I took these pictures during the few minutes the sun was out.  Hopefully the kids will be able to play outside for a little while this afternoon.  We have to do something to blow off some steam.

The good news...I am caught up on laundry.  All we have been wearing = PJ's.  Every night I throw a load of PJ's in to wash, and then right after I toss in a load of towels.  Easy peasy.

This my friends is a picture of our patio last night before the snow.

Solid.Sheet.of.Ice.

Slide slide slippity slide :)

Watch your step there pooch.

Speaking of pooch.  Our dogs are cray cray right now.  Bogey is so stir crazy.

He decided to climb the couch.  The kids were laughing hysterically at me as I was shoooing him down.

His day is not complete if he isn't getting on Harley's nerves.

She doesn't like him at all...there isn't a hair on her body that likes him.
She growls at him non stop.
DRAMA!

Bogey fell on her and it got really dicey around here.
I was afraid fur was about to fly, but everyone is A-ok.

Enough of me blogging about my goofy dogs. I hear kid noises.
Sounds like nap time is over.  I must get back to the duties of motherhood.

Happy Friday!
