girl time


Saturday, while Gary and the kids were camping I snuck away for an awesome lunch with 5 of my high school buddies!

Us girls try to get together as often as we can, and when we do it is always so much fun. We sat in a booth at Chuy's for hours. We always chit chat like we see one another every day.

I am so lucky to have these ladies in my life.
We have known each other pretty much our whole lives.
Oohhh the stories! HA!
Love ya ladies...can't wait to see you again soon.

a river runs through it





Our campsite at Lake Whitney this weekend was pretty much a muddy mess!
At one point we thought we may have to build an Ark to get out of there.

The kiddos had a blast splashing in the water.
I have a few pictures of them getting all muddy, but I am done for the day.


I am so tired. Night night and lets hope the rain stops so we can dry out.

Oh, don't forget the bouncy ball and bracelet.

You just never know when you might need to throw a ball around
while wearing a few rings, a necklace of lip gloss, and two pairs of shades.

Chicken pasta salad



This is my favorite salad this time of year.

Gary isn't a big fan, so I usually make a batch and
eat it for lunch for two or three days. And that is
fine with me because...



I LOVE it!
It is so fresh and flavorful.



I shred leftover chicken breast.

If I grill a few breasts for a different recipe
I will grill an extra breast to toss into this salad.

I boil whole wheat pasta.

To it I add chopped onion, celery and a chopped hard boiled egg.

I mix in a bit of mayo [i use the mayo w/olive oil]

I don't really have specific measurements for any of this...I just eyeball it.

Then I add the most important thing...salt. I like to add more salt than normal to this salad. And of course pepper.

Then I let it sit in the 'fridge for hours.

It is perfect after coming in from the backyard on a warm spring day.
And it is pretty low fat!
