Christmas Eve is my favorite

We all enjoyed our traditional crab leg dinner tonight.  It was so good.  It's hard work breaking open the crab legs, but we love the yummy taste!

The kiddos baked cookies this morning and then decorated them.

Gary had to work for half the day and then he arrived and helped the kiddos decorate Santa's cookies.

Oh Daisy Mae!  You are a sweet pup!

We can't believe the weather here in Gerogia today!  It is a Sleeveless Christmas Eve!

tiny chef

This little lady loves to be in the kitchen as much as I do.  She begged all evening to make homeade dog treats and wanted to make them while I was busy in the kitchen cooking.  Our kitchen isn't super large so I kept saying NO!

 Finally she wore me down.

She found a pinterest recipe for dog treats and had them whipped up and in the freezer in no time.

The pups devoured their treats and have more leftover for days to come.
I love my mini chef and so do Lily and Daisy!

need a meal idea?

This is what we ate last week.
I love having my meals planned out because it helps with the evening rush!

Monday

Salmon cakes with baked red potatoes and steamed broccoli.

Tuesday

Slow cooker pinto beans and cornbread.

Wednesday

Cream cheese and jalapeno stuffed chicken cutlet, beans and corn/zucchini saute.

{For the stuffed chicken I mixed half a block of cream cheese with shredded cheddar and chopped pickled jalapenos.  I smeared it onto the chicken cutlet and secured it with toothpicks.  I baked it on 400 degrees for about 25 minutes.}

Thursday

{I obviously changed this up a bit.  I added black beans and subbed pasta for the crescent rolls.}

Friday night ... last night we ate out!

I had a crab cake with mashed red potatoes and broccoli

I love looking back through my old posts to see what we ate.  It gives me great ideas of things I may have forgotten about!

don't toss the brown bananas

My family will not eat a banana that looks like this.  Will yours?
Personally I don't judge a banana by it's peel.  I love them sorta soft.

When they are too brown for the family I will save a few for myself and peel the rest.

Then I slice them up and throw them into a baggie!

I put one banana in each baggie for portion control.

Finally I throw them into the freezer and later once frozen I add them to smoothies!  The kids are smoothie obsessed right now.  A baggie of banana blended with a handful of strawberries and some orange juice =  the best breakfast smoothie ever.  It's kid approved!

So, don't throw away your brown bananas!!

chicken tamale casserole pin gone right, oh so right!

We have had so many school delays due to the weather.  It's been very frigid or snowy this entire month.  When I know I'm home all day I want to make something fun and different for dinner.  Soooo, I get on pinterest and search for ideas!  Pinterest is so very fun.  I found a great recipe to help pass the 'snow day' down time.  As you know, I enjoy being in the kitchen.  Sometimes the kids play together so well I get bored.  I have a problem.  When I get bored I cook.

Also another excuse to cook:  using the oven warms this old farm house kitchen.

I found this chicken tamale casserole recipe.

I followed it pretty much except I made a few changes.  It's snowing and cold and I didn't have a can of creamed corn.  There is no way I was leaving to get a can, so I put a can of whole kernel corn in the blender and added heavy cream to it.  Viola...creamed corn.  I added a can of chopped green chilis to it for flavor.  Also I must note because of the heavy cream I cut the milk called for in the recipe in half.  I used 4 cooked chopped chicken breasts and I'm not sure if they equaled 3 cups of chicken, but the recipe was amazing anyway.

Otherwise I followed the recipe.  Ahhhh!  It is OUTSTANDING!

I am a tamale lover and one of my life long goals is to make tamales from scratch.  Gary and I both want to do this.   For now, this recipe satified my tamale craving.

celebrating dad's 40th

As you know birthday celebrations in our house are always special and we like to make a big deal of them.  The kids get to pick the restaurant or meal they want that night and they also get to chose their cake flavor of the year.  Well, the adults get to do this also.  We are the ones who started it with our families before we had these two munchkins.

Anyway, Gary choose steak for his meal, here at home.

Andddd he picked cookie cake.  I'm awful at cookie cake, but I vow to make it better next year.  Once again this year, like last year, I had to toss the pan in the garbage after we ate what we wanted of the cookie.  I didn't even decorate it.

We just cut off slices of cookie and dipped it into the frosting.  Ahhhh!  It tasted the same, but dang what a mess.  I was frustrated as all get out!  Gary didn't care and the kids thought the whole thing was hilarious.  I have always said 'A baker I am NOT!'

Hey, enough is enough though.  I have 364 days to practice this cookie cake thing until next year.  I will be sharing my failed cookies in hopes of conquering it before next year.  Pshhhh.  My luck he will request a different cake next year.  Heeeheeeheee!

We had a fun night with dad as he gets ready to board a plane to Punta Cana.  Yep, a Pub Crawl and a weekend getaway to The Dominican Republic.  I'd say he's bringing in 40 just right.

Happy 40th Gary!

spaghetti squash

I made spaghetti squash yesterday.

The hardest part of the whole process was cutting the squash in half.

I didn't do anything to my squash once I cut it.  I placed in a 375 degree oven and baked it face down for 50 minutes.  Then I checked on it and baked it for 20 minutes more.

It was sweet perfection.  I scraped the spaghetti strings out of the 'shell' and ate them with a little salt and pepper and a dab of butter.  I love the sweet flavor of spaghetti squash just as it is.  I know there are tons of recipes out there, but I just eat mine plain.  I have more in the fridge.  I'm thinking I should make the mac and cheese recipe everyone talks about.  Mmmmm!

for the love of cooking and eating and eating

The holiday seasons brings out the cook and baker in me.

It also brings out the eater.

I have cooked, our friends have cooked.  I feel the need to eat everything in sight the last week or so of December.

I even made pancakes for the first time!

I know, I know, but I burned them once years ago and never looked back.  Gary is usually the pancake maker in this house.

We love nachos and Layla's tortellini soup was a hit!

Our favorite easy peasy lunch is meat and cheese on a Hawiian roll.

I will never forget the cheeseburger I ate.  It was bigger than my face and oh so good.  I dream of that thing, because I am a cheeseburger LOVER!

I am giving up the fries and sweets soon though.  I am getting back to my version of clean eating.

I let myself enjoy the holidays with no worries, and now it's time to get back to working out and our normal dinner time routine!  We have been so busy and I miss our evening meals together at the table.  The new year is upon us!

Goulash

Don't pass out, yes this is my blog.  I feel so bad about not posting recipes lately.  I was a 'once a week' recipe poster when I lived in Texas, but soccer and dance and daily activities have me BUSY!

For me, fall is a time for cooking. I enjoy cooking when the kids go back to school.  They always come home from school hungry and usually eat good at dinnertime.  Learning makes kids h.o.n.g.r.a.y!

Lately I start every meal with sauteed onions, garlic and bell peppers.  I believe it's a great way to add tons of flavor to any recipe and the smell is amazing!

I also love the texture that cubed zucchini add to recipes.  I made sloppy joe casserole a few weeks ago.  It was a huge it in our house and I didn't feel to terrible about the casserole when it was packed with fresh zucchini.

I whipped up this goulash recipe when I found pasta made with spinach and sweet potatoes.  Gary and I have been staying away from pasta, so when I saw this I thought it would be good to try without all the pasta guilt.

I boiled the pasta, drained it and put it in the slow cooker.  I sauteed the garlic, onion, peppers and zucchini  in olive oil and placed them into the slow cooker.  I browned ground turkey meat and added it to the slow cooker also.  I tossed it all around and added a can of corn, two cans of tomato sauce and one can of diced tomatoes.  My canned tomatoes were actually a chili mix.  I'm not sure what makes the tomatoes, chili tomatoes, but they were a perfect addition to give the goulash a bit of spice.

I mixed every thing up and let it sit in the slow cooker on warm.  It was already cooked and I didn't want the pasta to get mushy.  Once it looked all steamy and good I added salt and pepper and then served it up.  It was pretty easy on a busy evening we were heading to soccer practice.  I prepared everything before the kids got home from school and served it later after all the flavors meshed in the slow cooker.

What recipe do you use for goulash?
