potato chip chicken

Not that you wanted to know, but  I'm telling you anyway....

We need to by groceries.  

We usually go once a week, but we had leftover stuff from last weeks meal plan and I wanted to use it all up.  We were gone last weekend and honestly I was sore for 2 days after the mud-run.  So I didn't grocery shop.  I could have gone today, but I want to wait to see what I get in my Bountiful Basket this weekend.  So we wait and we use up what we have hanging around the house.

Last night that was boneless skinless chicken breasts.



What in the world was I gonna do with them?

I found a bag of Wavy Lays in the pantry.  Breading?  Okay!

So I mushed them up in a quart size baggie.  I dipped them into 1 egg slightly beaten.  Then I coated them in the crushed chips.  I baked them up, steamed some veggies and served it all with beans.





Who knew it would taste so good?  

The kids loved it and so did Gary and I.  It may not have been the lowest calorie meal, but I sure was comforting!

I'm sure that the kids did NOT mind chip-breaded chicken! I'm always amazed at how creative you are in the kitchen, by the way. You're definitely one of those cooks who can throw things together and make it work.
