french onion chicken


I have to share a super simple recipe with you.  It has become a family favorite of ours.  With two small kids I will serve whatever I can if they will eat it!!  I love it and just know you will too. 

I got the recipe from the back of the French's french fried onions can. 


What you need:

3-4 boneless skinless chicken breasts
2 eggs slightly beaten
1 large container of french fried onions, smashed up
You can use regular or the cheddar flavor. 

I have made it both ways and I love them both.

What you need to do:

Season the chicken breasts with salt and pepper.  Place the onions in a baggie and mash them up really fine.  Coat the chicken in egg and then coat in the onions.  Place the coated chicken in a baking dish and bake at 400 degrees for 20-25 minutes or until the chicken is cooked completely. 

I am always nervous I will over cook, or under cook chicken.  When I make this recipe I usually cut the chicken into 1 inch strips.  It insures a faster cook time resulting in a very tender yummy main dish!

I usually serve ranch style beans and carrots to complete this meal. 
My kids love carrots.  I steam fresh baby carrots on the stove top and then sprinkle them with a dash of cinnamon. My kiddos will eat this meal up!

I make something similar to this, except I use honey mustard instead of the egg! Hubs and I love it!

Yum, this sounds amazing!!! I love those onions, I always make green bean casserole for the holidays and have to hold myself back from eating all the friend onions!!
