No fuss pumpkin cupcakes
1 package yellow cake mix
15 ounces pumpkin puree
1/3 cup sugar
1/3 cup vegetable oil
1 tablespoon of pumpkin pie spice
In a large bowl mix cake mix, pumpkin, eggs, sugar and pumpkin pie spice. Beat with a hand mixer on medium speed for 2 minutes. Pour into greased muffin tins, or use fun cupcake liners like I did. Bake at 350 degrees for 25-35 minutes or until a knife inserted in the center comes out clean. Cool.
After cupcakes have fully cooled add frosting to tops. Yum :)
I got the recipe from a cookbook I bought at the grocery store before Thanksgiving last year. I did change it up a bit. It is really called 'no fuss pumpkin cake', but we like cupcakes better in our house. And I was hoping to pass them off as pumpkin muffins...at least the kids would eat something for breakfast...ha! Breakfast is so hard in our house. These little pumpkin lovies are so good, I could eat then for breakfast, lunch or dinner...so rich & delish.
Don't you just love little recipe books you grab from the grocery store check out area. I have found more fun books and magazines while waiting in the check out line. Mmmmm...they must be doing that on purpose.
