Cheddar Chicken

I try to make a new recipe once a week to keep things exciting around here. 
Thankfully reading other blogs and having foodie twitter friends I have been successful at cooking a variety of things. I do change some of the recipes up a bit.  I don't always follow recipes exactly because I may or may not have certain things on hand. For example:  I didn't have garlic on hand, so I used garlic powder.

I found this chicken recipe on Ashley's blog

I had to share with y'all!  This one will not disappoint! 



Ingredients:

1 sleeve of whole wheat Ritz crackers crushed
6 ounces of grated cheddar cheese
a couple of shakes of garlic powder
salt and black pepper
4 6-ounce boneless, skinless chicken breasts
4 tablespoons unsalted butter, melted

Directions:

Preheat oven to 350° F.

In a bowl, combine the crackers, cheese, garlic, and ¼ teaspoon each salt and pepper.
Dip the chicken in the butter, then in the cracker mixture. Pressing to help the crackers stick.
Place the chicken in an oven safe dish.
Sprinkle any remaining cracker/cheese mixture on the chicken and drizzle with any remaining butter.
Bake until the chicken is golden brown, 25 to 30 minutes.
