cornbread... a fall necessity!

I love cornbread fresh out of the oven all warm and buttery!

I just use the regular Jiffy cornbread mix.  I double the recipe every time so it turns out nice and thick.

I pour the cornbread batter into my cast iron skillet and bake it.

Delicious warm golden goodness.

In our house half the batch was gone in a flash!

I typically only use real butter, but I heard about this Country Crock and had to try it. It is amazingly delicious and it gives corn bread just the sweetness needed for a cake like treat!

This is the way Gary eats his cornbread...topped with Queso and jalapenos!

Do you like cornbread?

Jiffy is my FAV!!!! I add sugar and sometimes melted butter. It's SO yummy. That queso & jalapenos look yummy too...but with chips. BTW...Land O Lakes makes a honey butter that's super delicious.

I almost always use Jiffy Mix too. I can't seem to make very good cornbread from scratch and we all love the sweetness that Jiffy Mix has:)

Jiffy is the best! (OMG I'll have to try the honey butter.) I also use it to make corn casserole/souffle... Just make one box of mix as usual, stir in 1tbsp sugar, 1 can drained corn, and 1 can creamed corn. Pour 1 stick of melted butter in the bottom of a 13x9" and pour corn mix over it. Bake at 350-375 for 20-30min. (Just whenever it's done and the top is golden.) ...Family FAVORITE!!!

Um, can you believe that I have never ever eaten cornbread before?
And did you also know that I am drooling right now?
And that I desperately want to try Gary's version of cornbread!
I'm coming over!!!
